I'm not normally someone that will reach for a low calorie or no calorie sweetener. Normally when I am baking or when I make sweet tea, I only use regular sugar. Whenever I've used no calorie sweetener in the past it always gave the food or drink a weird after taste that I just could not get over. ?I just could not stand that gross after taste, so I'd revert back to using regular sugar and pass up the?low calorie or no calorie sweetener once again.?

When I received a message from NECTRESSE?Sweetener?asking me if I?d like to try their Natural No Calorie Sweetener I was a little hesitant at first, but I figured it wouldn?t hurt. Plus, after learning that NECTRESSE?Sweetener?is the only 100% natural sweetener made from fruit (monk fruit extract) and that it doesn?t have an after taste, I was even more willing to give it a try.??

I hadn?t noticed NECTRESSE?Sweetener?at the stores because I don?t use sweeteners, but since trying it out I?ve started noticing it at all of my local stores. Even hubby noticed it and pointed it out yesterday when we were at the grocery store.?

To try out the NECTRESSE?Sweetener, I decided to make Baked Apple Cinnamon Pancakes.? I have started making baked pancakes instead of the traditional stove top ones because I don?t have the patience that are required for stove top pancakes. I always end up flipping them at the wrong time and getting pancake batter everywhere. Not to mention I always undercook them or over cook them. ?But with baked pancakes, I can make them the perfect size and cook them perfectly every time. ?Anyways, back to the sweetener; I used the NECTRESSE?Sweetener in place of sugar in these Baked Apple Cinnamon Pancakes. I wanted to see if baking with this sweetener would be the same as baking with sugar and I wanted to see if these pancakes would have the funny aftertaste.???

I am happy to report that yes it does bake just like regular sugar and there is no funky aftertaste. ?I ate them without syrup and they tasted great, I think I?ll add more cinnamon and probably use two apples next time I make them but the overall taste was really good. ?Hubby enjoyed his pancakes with syrup and said he?couldn't?taste a difference between these and ?normal? pancakes. ?Yes, so you?ll notice these pancakes in the picture have butter and syrup on them, hubby?s not going to eat a plain pancake. It?s just not going to happen.

So there you have the BigBear seal of approval, haha. No added calories, with the same great taste. I even tried a bit on my finger too, (so did hubby) just to see what it tasted like and it actually does taste pretty good.

I?ve got packets left that I?m going to use over the next few weeks in things like tea, coffee and a few other recipes, so I?ll let you know how that goes. I really hope this works for tea haha. I love sweet tea!

Ingredients??

- 2 cups all purpose flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 6 Nectresse Natural No Calorie Sweetener packets
- 1 tsp cinnamon
- 1/2 tsp salt
- 2 large eggs
- 1 tsp vanilla
- 1 1/2 cups milk
- 1/4 cup melted butter
- 1 cup chopped apple, peeled
Directions
Pre-heat oven to 350F. In a medium bowl mix together, the flour, baking powder, baking soda,?sweeter,?cinnamon?and salt. Set aside. In another bowl whisk?together eggs, vanilla, milk and melted butter. ? Add to dry ingredients and mix.?Fold in apples. (I used my stand mixer to mix?everything) Spray a whoopie pan with non-stick cooking spray.( if you don't have a whoopie pie pan you can just pour this batter into a large bar pan/cookie sheet with side and make a huge one and cut it into squares after baking) Bake in a 350F oven for 8-10 minutes. Remove and place on cooling rack. Continue until batter is gone.?Yield: 12 Apple Cinnamon?Pancakes
